I like snacking on cherry tomatoes so when I found a recipe for stuffed cherry tomatoes I couldn’t help but try it out. The recipe I found was on a weight watchers site, but I didn’t care. It was meant to share like in a party setting but when it comes to tomatoes I get selfish and I can eat them by myself.
- 24 cherry tomatoes
- 2 oz blue cheese, crumbled
- 4 slices crispy bacon
- 1 Tbsp chives
The directions to this recipe are really simple. On the opposite end of where the stem used to be is where you are going to carve out a shallow cavity in the bottom. You will then squeeze some of the seeds out of the tomato. You will put 1 teaspoon of cheese inside of each one and filling it up to the top. Top it with bacon and chives.
