- 24 large cherry tomatoes
- 4 slices bacon, cooked until crispy and crumbled
- 4 oz blue cheese, crumbled
- 2 tbsp mayonnaise
- 1 tbsp fresh chives, finely chopped
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Prepare the Tomatoes:
Wash the cherry tomatoes thoroughly and pat them dry.
Using a sharp knife, carefully cut off the tops of each tomato.
With a small spoon or melon baller, gently scoop out the seeds and pulp from the inside of each tomato, being careful not to puncture the sides. Set the hollowed tomatoes aside.
