Equipment

  • small bowl
  • whisk
  • large resealable plastic bag or shallow dish
  • grill
  • tongs
  • meat thermometer

Ingredients

  • 4 boneless, skinless chicken breast
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • lemon slices and fresh herbs for garnish

Instructions

Step 1: Prepare the Marinade

  • In a small bowl, combine olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Mix well to combine.

Step 2: Marinate the Chicken

  • Place the chicken breasts in a large resealable plastic bag or a shallow dish.
  • Pour the marinade over the chicken, ensuring each piece is well-coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours for more flavor.

Step 3: Preheat the Grill

  • Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

Step 4: Grill the Chicken

  • Remove the chicken from the marinade and discard any remaining marinade.
  • Place the chicken breasts on the preheated grill.
  • Grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center.

Step 5: Serve and Enjoy

  • Remove the chicken from the grill and let it rest for a few minutes.
  • Garnish with lemon slices and fresh herbs if desired.
  • Serve with your favorite summer sides such as a fresh salad, grilled vegetables, or corn on the cob.

Notes

Tips for Success

  • Marinating Time: The longer you marinate the chicken, the more flavorful it will be. Aim for at least 30 minutes, but up to 2 hours is ideal.
  • Grill Marks: For beautiful grill marks, avoid moving the chicken around too much on the grill. Let it cook on one side before flipping.
  • Internal Temperature: Always check the internal temperature of the chicken to ensure it's fully cooked. The safe internal temperature for chicken is 165°F (74°C).
