Ingredients
  

  • 1 lb boudin sausage (remove the casing)
  • 2 lg eggs
  • 1 tbsp milk
  • 1 cup all-purpose flour
  • 1 1/2 cups breadcrumbs (seasoned or plain, your choice)
  • salt & pepper to taste
  • Cajun seasoning (optional, for extra kick)
  • oil for frying (vegetable or peanut oil works great)

Instructions
 

Prepare the boudin

  • Remove boudin sausage from casing and place into a large bowl. Use your hands or a spoon to mash and mix until the texture is smooth and sticky enough to shape.

Form balls

  • Scoop about 2 tablespoons of the mixture and roll into balls (think golf ball size). Set aside on a tray.

Set up breading station

  • In one bowl, mix flour with a bit of salt, pepper, and Cajun seasoning.
  • In a second bowl, whisk eggs and milk together.
  • In a third bowl, add breadcrumbs.

Bread the balls

  • Roll each ball in flour, then dip in egg wash, then coat in breadcrumbs. Press lightly to help the coating stick.

Chill (optional but helpful)

  • Place the breaded balls in the fridge for 20-30 minutes. This helps them hold their shape during frying.

Fry the balls

  • Heat oil in a deep fryer or heavy skillet to 350°F (175°C). Fry a few balls at a time for about 3–5 minutes, or until golden brown and crispy. Don’t overcrowd the pan.

Drain & serve

  • Use a slotted spoon to remove the balls and let them drain on paper towels. Serve hot with your favorite dipping sauce!
