  • 2 lbs fresh strawberries
  • 8 oz cream cheese
  • 1/4 cup sugar
  • 12 oz white chocolate chips
  • blue sugar crystals
  • 1 sheet graham crackers, crushed, for topping

Prepare the Strawberries:

  • Wash and rinse strawberries.
  • Using a paring knife, hull the strawberries by cutting out the stems and a small portion of the inside to create a cavity for the filling.
  • Barely cut the bottoms off so that they can sit flat in an upright position.

Make the Filling:

  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract.
  • Use a hand mixer or whisk to blend until the mixture is smooth and creamy.

Fill the Strawberries:

  • Spoon the cream cheese mixture into a piping bag or a plastic sandwich bag with one corner cut off.
  • Fill the strawberries with the cream cheese and sprinkle the top with some crushed graham crackers.

Prepare the white chocolate

  • In a small microwave-safe bowl, melt the white chocolate chips in the microwave in 20-second intervals, stirring between each interval until fully melted and smooth.

Dip and Decorate

  • Dip the top of each filled strawberry into the melted white chocolate.
  • Immediately sprinkle the blue sugar crystals over the white chocolate before it sets.

Set and Serve

  • Place the decorated strawberries on a baking sheet lined with parchment paper.
  • Allow the chocolate to set at room temperature or place the strawberries in the refrigerator for quicker setting.
  • Serve chilled or at room temperature.
